Fresh, light, and a real eye-catcher: This tartare combines sweet mango, creamy avocado, and spicy salmon into a perfectly balanced combination. Layer by layer, a dish is created that not only looks good but tastes just as good. Ideal as a starter or a light main course.
Ingredients (for 2 people):
- 300 g fresh salmon fillet (skinless)
- 1 ripe mango
- 1 - 3 tbsp organic mango habanero drop
- 1 clove of garlic
- 1 organic lemon
- 1 bunch spring onions
- 1 ripe, medium-sized avocado
- Organic Avocado Crunch spice blend
- 2–3 sprigs fresh dill
- 1 tbsp good olive oil, a little salt
- Optional: cress, radishes and a prawn for decoration
- Eye-catcher: 1-2 small quail fried eggs next to the tartare
ZUBEREITUNG
- Prepare the salmon: Cut salmon into fine cubes. Cut spring onions into thin rings and add to the salmon. Finely chop garlic and dill and add as well. Season with lemon juice, olive oil, and a little salt. Mix well and let marinate.
- Mango layer: Peel and dice mango. Season with a few drops of Mango Drop. Tip: You can also purée the mango and use it as a mirror on the plate.
- Avocado layer: Halve, pit, and dice avocado. Drizzle with some lemon juice and season with Avocado Crunch.
- Now for layering! Place a serving ring on the plate:
- 1st layer: Fill evenly with mango cubes and press lightly.
- 2nd layer: Spread avocado cubes on top.
- 3rd layer: Add the salmon-spring onion mixture on top and smooth.
- Finish: Carefully remove the ring and garnish the tartare with cress, radish slices, and a (fried) prawn. Optionally, sprinkle some more Avocado Crunch on top – done!
- Enjoy: Serve immediately – fruity, spicy, and absolutely irresistible!
- Tip: Small quail eggs perfectly round off the look and taste.
