Ingredients for 2 people (as a side dish):
- 1½ cups couscous
- 1½ cups boiling water
- 5 tbsp olive oil
- 1 tbsp Ras el Hanout
- Salt
- Pistachios, a handful, peeled and chopped
- Dried figs or dried apricots, a handful cut into strips
- Lemon juice and zest from one lemon
ZUBEREITUNG
- Pour the couscous into a heatproof bowl, add the olive oil, Ras el Hanout and the salt and massage thoroughly into the couscous.
- Pour the boiling water over it and let it soak for 10 minutes.
- Fluff the swollen couscous with a fork, then mix in the prepared dried fruit, lemon zest and juice, as well as the pistachios. Season with salt if desired.
