Ingredients for 4 people (as a side dish):
- 1 large cauliflower
- 4 tbsp olive oil
- 2 tbsp veggie masala
- Salt
- At will:
- 1 mango, cut into cubes
- Coriander, fresh

- Divide the cauliflower into large florets and cut them in half. Roast on a preheated grill pan, cut side down.
- Meanwhile, in a large bowl, stir together the oil, veggi masala and salt. Pour the grilled vegetables into the bowl and mix thoroughly with the oil marinade.
- For raw foodists, the work is done at this point. Anyone who prefers the cauliflower softer should bake it in a preheated oven at 180°C for about 10 minutes.
- Serve the cauliflower on a platter and top with mango and coriander if desired.
