Hearty, warming, and uncomplicated: This potato goulash is a classic comfort food. With just a few ingredients and robust flavors, you get a simple meal that is both satisfying and good for you.
Ingredients (for 2 servings):
- 1 bottle of organic vegetable broth with mushroom OR organic bone broth with free-range chicken / grass-fed beef (depending on taste)
- 1 small onion
- 1 clove of garlic
- 1 bell pepper
- 400g potatoes
- 1 tbsp butter or oil
- 1/2 tbsp tomato paste
- 1 tsp paprika powder
- 200g chopped tomatoes
- 1/2 tsp marjoram, salt, pepper
- 1 tbsp chopped parsley
ZUBEREITUNG
- Finely chop the onion and garlic, and cut the bell pepper and potatoes into bite-sized cubes.
- Heat butter or oil in a pot, sauté the onion and garlic until translucent. Stir in the tomato paste and paprika powder and sauté briefly until fragrant.
- Add the bell peppers, potatoes and broth, and simmer gently over medium heat for 20-30 minutes, until the potatoes are soft.
- Finally, stir in the tomatoes, marjoram, salt and pepper, season to taste and let it simmer briefly again.
- Serve with chopped parsley and enjoy.
