Hakubaku delivers the perfect organic soba noodles with an ideal buckwheat content of 29% – ensuring the best texture. Too high a buckwheat content makes the noodles brittle. Depending on the season (or your mood), soba can be served either in hot broth (kake soba) or eaten cold with a tsuyu dipping sauce made from soy sauce, mirin, and dashi ( zaru soba). The noodles are cooked for only 4 minutes and then rinsed in cold water. Thinly sliced nori sheets, spring onions, and a little wasabi make a good accompaniment .
Tip : Don't throw away the cooking water from the soba noodles! It is considered particularly nutrient-rich and is often reused for cooking in Japan or served as a drink .
Store in a dry place, protected from light, at room temperature.
