This warming vegetable soup is ideal as a light meal – for example, to prepare for a fast or on days when your body craves something comforting. Finely diced vegetables, mild spices, and a rich bone broth, or alternatively our mushroom vegetable broth, ensure full flavor without being heavy.
Ingredients (for 2 servings):
- 1 bottle (525 ml) of organic vegetable broth with mushrooms OR organic bone broth with free-range chicken / grass-fed beef (depending on taste)
- 1 small zucchini (finely diced)
- 1 small carrot (finely diced)
- 1 small sweet potato (finely diced)
- 1/2 fennel bulb (cut into strips)
- 1 tsp freshly grated ginger
- 1 pinch of turmeric
- 1 tbsp mild olive oil
- salt and pepper
- Fresh herbs (chives, parsley)

- Sauté the vegetables: Heat the oil, briefly fry the zucchini, carrot, sweet potato and fennel.
- Add bone broth: Pour in the broth and simmer gently.
- Seasoning: Add ginger, turmeric, salt and pepper.
