Light vegetable soup

Leichte Gemüsesuppe

This warming vegetable soup is ideal as a light meal – for example, to prepare for a fast or on days when your body craves something comforting. Finely diced vegetables, mild spices, and a rich bone broth, or alternatively our mushroom vegetable broth, ensure full flavor without being heavy.

Ingredients (for 2 servings):

  • 1 bottle (525 ml) of organic vegetable broth with mushrooms OR organic bone broth with free-range chicken / grass-fed beef (depending on taste)
  • 1 small zucchini (finely diced)
  • 1 small carrot (finely diced)
  • 1 small sweet potato (finely diced)
  • 1/2 fennel bulb (cut into strips)
  • 1 tsp freshly grated ginger
  • 1 pinch of turmeric
  • 1 tbsp mild olive oil
  • salt and pepper
  • Fresh herbs (chives, parsley)

ZUBEREITUNG

  • Sauté the vegetables: Heat the oil, briefly fry the zucchini, carrot, sweet potato and fennel.
  • Add bone broth: Pour in the broth and simmer gently.
  • Seasoning: Add ginger, turmeric, salt and pepper.
  • To serve: Garnish with fresh herbs.
  • Tip: Gentle cooking preserves flavors and nutrients. A squeeze of lemon juice adds extra freshness. Perfect as a light meal before a fast or on quiet days.
